The olives are grown in the foothills of the French Eastern Pyrennes in virgin soil, untouched by any chemicals. The land remains protected by strict organic farming practices.

The name and the legend

Local legend has it, that the name Querubi is derived from the 12th century Catalan Mas, which was believed to be the last rest stop for Cathar pilgrims from Southern Catalunya heading North to the famous Cathar Castle "Chateau de Queribus", Querubi meaning "small Queribus'.

The French Eastern Pyrenees, home to our organic olive farm, has for many centuries offered a superb climate for olive growing. 

Mild winters, clement temperatures, soft rain in spring, calm winds during the flowering period in April and May.

Aroma and Taste

Querubi Extra Virgin Olive Oil has an intense aroma of wet leaves and spicy herbs, including bay, parsley, and a touch of thyme, with strong green tea and a hint of ginger.

Its taste is deeply herbaceous, with a salad bowl of strong leaves including mustard, watercress and rocket with more culinary and a touch of grapefruit pith.

Extremely well balanced bitterness and pepper never mask the fruit.

All these elements linger into the attractively long aftertaste and are joined by nuts and biscuits towards the end.
