Juice Asylium is the project from the funky Sir of Sangiovese Alessio Guidi.
It brought so much joy last Spring that we got ahead of the game and stock up some before it runs out.
No wood barrel has touched the precious juice.
Sangiovese and Merlot ferment together like good 'ol friends, though some of the Sangiovese undergoes carbonic maceration, adding to the fun.
Spontaneously fermented, no added sulphur, no filtration. As natural and pure as it gets!
Yes the sour cherry is there, but it's layered with chunky forest fruits, night blooming flowers and the racy ribena acidity that makes you wanna go back to the glass before you even think about putting it down.
